Ingredients required (Quantity for 3 people)
Eggs (seven)
Two medium onions
Two medium tomatoes
Two green chilly
1 inch ginger
8 to 10 garlic cloves
1 whole mace
2-3 inch cinnamon
2 dried red chilly
Chopped green coriander
Turmeric powder
Red chilly powder
Coriander (Dhaniya) Powder
Meat masala
Dry mango powder/ Amchoor Powder
Salt
Mustard Oil
Ghee/Clarified butter/Butter (1 teaspoon)
Method of Preparation
Boil the eggs for 10-12 minutes (we need hard boiled eggs)
Finely chop onions, green chilly, ginger and garlic together.
Finely chop tomatoes.
Now heat 3-4 tablespoon mustard oil in a wok and add the whole spices (1 whole mace, cinnamon and dried red chilly).
Saute and add chopped onions, ginger, garlic and green chilly.
Add 1/2 teaspoon turmeric powder, 1/4 teaspoon red chilly powder, 1/2 teaspoon coriander powder and 1 & 1/2 teaspoon meat masala (It has been mentioned in previous recipe blogs that we use all spices from MDH and their meat masala has really nice blend) - Not Sponsored.
Saute and mix well.
Add in chopped tomatoes and add salt (as per taste) to cook them nicely.
Add 1/2 teaspoon dry mango powder (amchoor powder) and saute till it starts releasing oil.
Add water to adjust the consistency of the gravy as per your liking.
Now heat 1/2 teaspoon butter/ghee in another pan and add the boiled and peeled eggs.
Sprinkle 2-3 pinch each of turmeric powder, red chilly powder and salt. Shake and mix to coat all the eggs properly.
Add theses eggs to the gravy. Mix and garnish with chopped green coriander (dhaniya).
Enjoy with roti, rice or naan.
