Vada Pav - A Flavorful Street Food Recipe

It's just not "a recipe"..It is "the street food recipe" of famous Vada Pav with two most delicious and flavorful condiments - Shengdana Chutney (Peanut Garlic Coconut Dry Chutney) & Green Coriander Chutney.

Ingredients required (For 8 Potato Vada)

  • Boiled Potatoes (4 Large)

  • Curry Leaves (8-10)

  • Finely chopped ginger (1 Inch Piece)

  • Finely chopped green chilly (3)

  • Mustard Seeds (1 Teaspoon)

  • Asafoetida/Hing (2-3 Pinch)

  • Turmeric Powder (1/2 Teaspoon)

  • Red Chilly Powder (1/2 Teaspoon)

  • Chopped Green Coriander

  • Oil (3 Tablespoon)

  • Salt (As Per Taste)

  • Lemon (Half)

Ingredients required (For Vada Batter)

  • Gram Flour/Besan (5 Tablespoon)

  • Rice Flour (1 Tablespoon)

  • Turmeric Powder (1/2 Teaspoon)

  • Asafoetida/Hing (A Pinch)

  • Baking Soda (3-4 Pinch)

  • Salt (As Per Taste)

  • Water

Other Ingredients

  • Pan (Bread bun)

  • Green Coriander Chutney (Video Linked Below)

Method of Preparation

  • Heat 3 tablespoon oil in a pan and add 1 teaspoon mustard seeds. Let Them splutter (cover with a lid to avoid spillage on your cook top)

  • Add curry leaves, chopped green chilly, chopped ginger and 2 pinch asafoetida/hing. Mix well.

  • Add 1/2 teaspoon each of turmeric powder and red chilly powder. Mix well.

  • Add 4 boiled potatoes (roughly crushed with hands) - you can also add grated boiled potatoes instead, if you like a fine mixture.

  • Mix well and add salt (as per taste).

  • Mash coarsely with a masher.

  • Squeeze in half a lemon and mix well.

  • Take out on a plate and add a handful of chopped green coriander (dhaniya).

  • Mix well and let it cool down.

  • For the batter, add 5 tablespoon gram flour, 1 table rice floor, 1/2 teaspoon turmeric powder, a pinch of asafoetida(hing), salt and 2-3 pinch baking soda. Mix well

  • Add water to make a batter of thick consistency.

  • Take a handful of potato mixture and roll it into a smooth ball.

  • Dip it into the gram flour batter and coat properly.

  • Heat oil in a wok and deep fry coated potato balls (vada) till they become golden brown and crispy.

  • Slit the pav from three sides and apply green coriander chutney and shengdana chutney (both videos given below)

  • Insert a vada (fried potato ball) and press it lightly.

  • Sprinkle some more shengdana chutney and little green coriander chutney.
