Method of Preparation
Chop liver (kaleji) into bite size pieces and add 1 teaspoon each of turmeric powder and red chilly powder to marinate. Mix well and keep aside.
Heat any iron cookware (iron cookware offer better results for frying) and add 2 tablespoon sghee and 3 tablespoons mustard oil.
Add 3 slit green chilly, 2 whole red chilly, 1 inch cinnamon, 1 star anise, 1-2 mace flowers, 4-5 cloves, 4-5 black pepper corns and 2 pinch asafoetida.
Mix well and add 2 finely chopped onions and 1 tablespoon ginger garlic paste. Saute well till onions becomes transparent.
Add 1 teaspoon each of turmeric powder and red chilly powder and 3-4 tablespoon meat masala. Mix well and add about 1/4 cup hot water. Mix well. (Adding hot water avoids burning of spices while maintaining the cooking temperature)
Little amount of hot water can be added at a few intervals to attain desired consistency.
Add salt as per taste and saute till oil starts to release from the mixture.
Add chopped kaleji pieces and saute well till it becomes soft.
Enjoy spicy hot with rice or chapati or even just as a starter.
