Masala Kaleji Fry - A perfect non-veg starter and a main course


If you are a non-veg lover, try this super yummy and easy-to-make recipe which is just perfect as a starter as well as main course


Ingredients required

  • Chicken liver/Kaleji (500 grams)

  • Onion (2)

  • Ginger garlic paste

  • Green chilly (5-6)

  • Whole red chilly

  • Cinnamon (Dal Cheeni)

  • Mace (Javitri)

  • Star anise (Chakra phool)

  • Black pepper corns (Kali Mirch)

  • Cloves (Laung)

  • Asafoetida (Hing)

  • Turmeric powder (Haldi)

  • Red chilly powder

  • Meat masala

  • Clarified butter/Ghee

  • Mustard oil

  • Salt

Method of Preparation

  • Chop liver (kaleji) into bite size pieces and add 1 teaspoon each of turmeric powder and red chilly powder to marinate. Mix well and keep aside.

  • Heat any iron cookware (iron cookware offer better results for frying) and add 2 tablespoon sghee and 3 tablespoons mustard oil.

  • Add 3 slit green chilly, 2 whole red chilly, 1 inch cinnamon, 1 star anise, 1-2 mace flowers, 4-5 cloves, 4-5 black pepper corns and 2 pinch asafoetida.

  • Mix well and add 2 finely chopped onions and 1 tablespoon ginger garlic paste. Saute well till onions becomes transparent.

  • Add 1 teaspoon each of turmeric powder and red chilly powder and 3-4 tablespoon meat masala. Mix well and add about 1/4 cup hot water. Mix well. (Adding hot water avoids burning of spices while maintaining the cooking temperature)

  • Little amount of hot water can be added at a few intervals to attain desired consistency.

  • Add salt as per taste and saute till oil starts to release from the mixture.

  • Add chopped kaleji pieces and saute well till it becomes soft.

  • Enjoy spicy hot with rice or chapati or even just as a starter.
