Ingredients required
Mutton (500 grams)
Onion (3)
Ginger (2 inch)
Garlic (10-12 cloves)
Whole garlic
Green chilly (5-6)
Whole red chilly 2-3
Cinnamon (Dal Cheeni)
Mace 2 (Javitri)
Star anise 3(Chakra phool)
Black pepper corns 10-15 (Kali Mirch)
Cloves 5-6 (Laung)
Turmeric powder (Haldi)
Red chilly powder
Meat masala
Clarified butter/Ghee
Mustard oil
Salt
Method of Preparation
Heat 3 cups of mustard oil till smoking point and keep it aside to cool down completely.
Roughly grind 2-inch ginger and 10-12 garlic cloves in a mortar and pestle for fresh paste.
Clean mutton and add it to a big pot for further marination.
Add 1 and 1/2 cup of cooled mustard oil, 1 tablespoon turmeric powder, 1 teaspoon red chilly powder, slit green chilly, freshly ground ginger garlic, all the whole spices, salt (as per taste), 3 tablespoon meat masala and whole garlic (number off whole garlics can vary as per choice). Mix well.
Add 3 roughly chopped onions and 1 cup more cooled mustard oil. Mix well.
Add 3 tablespoon desi ghee and mix well (optional) but adding desi ghee enhances the taste.
Clean and dry a clay-cooking-pot.
Light up the fire (preferably use coal as it retains heat for a longer time).
Heat the clay pot and add 2-3 tablespoons cooled mustard oil. Add the marinated mutton and cover with a clay-lid.
Seal it completely with flour dough and prick at a few places. Cook for 40-45 minutes and shakes 2-3 times in between to avoid sticking at the bottom.
Open and add 2-3 tablespoons desi ghee for extra flavor. Mix well.
Enjoy it hot with rice and chapati. Don't forget to enjoy the juicy garlic pulp which will fill your mouth with bursting flavors.
