Exotic Veg Platter - Paneer, Mashed Potatoes, Rice & Stir Fried Veggies

Cooking something different than regular and super delicious for an at-home date night or for your kids or just to pamper yourself with a glass of wine, gives too much satisfaction..!!


So, let's make a meal platter full of taste and varieties.


Tawa Fry Paneer Tikka


Method of Preparation

  • Make a marination with 1 Tablespoon ginger garlic paste, salt (as per taste), 1/4 teaspoon red chilly powder and juice of half a lemon. Mix well.

  • Cut 200 grams paneer into 4 thick and equal slices.

  • Coat all paneer slices with the marination.

  • Cover and keep aside for sometime.

  • Brush a tawa with some oil and fry marinated paneer till golden brown from both the sides.


Stir Fried Veggies


Method of preparation

  • Take 1 bowl broccoli and 1/2 bowl mushroom.

  • Boil water in a pan and add some salt.

  • Add chopped mushrooms and boil for a minute.

  • Then add broccoli and boil both veggies for another minute.

  • Drain the water completely.

  • Heat 1/2 teaspoon oil in a pan and saute the boiled veggies.

  • Add little bit salt and saute for about 30 seconds.


Mashed Potatoes


Method of preparation

  • Peel and Chop two big potatoes.

  • Boil water in a pan and add 1/2 tablespoon salt.

  • Add the potatoes and boil till they become really soft.

  • Drain the water and take them out on a plate.

  • Mash them with a masher while they are still hot. (You can also pass mashed potatoes through a sieve to make them smoother)

  • Transfer the mashed content to a bowl.

  • Add 1 tablespoon soft salted butter and 1/2 cup grated cheddar cheese (you can use any cheese of your choice)

  • Mix well and add the seasonings.

  • Add 2 pinch black pepper powder, salt (as per taste) and chilly flakes (as per taste) & mix well.

NOTE : Microwave for 20 seconds just before serving


Pan-Fried Rice


Method of preparation

  • Heat 2 teaspoon oil or butter in a pan.

  • Add 1 teaspoon chopped garlic and saute well.

  • Add 1 bowl cooked rice and mix well.

  • Add some salt (as per taste) and little amount of chilly flakes. Mix well.

  • Garnish with finely chopped stems of green coriander (optional).


Now, assemble the platter and garnish everything except mashed potatoes with crispy fried garlic
