Thick and spicy Chicken Curry
Ingredients required
Chicken with deep cuts (500 grams)
Two large onions
One medium tomatoes
Three Green Chilly
10-12 cloves of garlic
One inch ginger
Two dried red chilly
One inch cinnamon
One black cardamom
6-7 cloves
Turmeric powder
Red chilly powder
Ginger garlic paste
Chicken masala
Corn Flour
Red Food Color
Salt
Clarified Butter (Desi Ghee)
Mustard Oil
Method of Preparation
Chicken Marination
Take Chicken pieces in a bowl.
Add 1 teaspoon salt, 1/2 teaspoon turmeric powder, 1/4 teaspoon red chilly powder, 1/2 teaspoon chicken masala & 1/2 teaspoon ginger garlic paste.
Mix well and let it marinate for at least an hour.
Curry Preparation
Coarsely ground 10-12 cloves of garlic and 1 inch ginger.
Heat a generous amount (8-10 tablespoon) mustard oil in a pan or wok.
Add the whole spices (dried red chilly, cinnamon, black cardamom and cloves) and 3 green chilly slit into half. Saute well.
Add two large onions, roughly chopped and saute well till they become soft and golden brown in color.
Add freshly grounded ginger and garlic. Saute well.
Add 1 medium sized chopped tomatoes. Cook till they become soft.
Add 1/2 teaspoon turmeric powder, 1/2 teaspoon red chilly powder, salt (as per taste) and 1 & 1/2 teaspoon chicken masala.
Add some water to cook the spices well and avoid sticking to the pan.
Cover and cook properly till it starts releasing a bit of oil.
Add marinated chicken to the curry and mix well. Add some water if required.
Cover and cook till chicken is done nicely.
Add 2 tablespoon clarified butter (desi ghee) and mix well.
Mix 1 teaspoon corn flour, a pinch of red food color and 2-3 tablespoon water in to another bowl and add it to the curry.
Mix well. Cover and cook for a few more minutes.
Serve hot and enjoy.
